Pumpkin Pie will only keep for 3-4 days in the refrigerator but will keep 1-2 months in the freezer. If after 3 days you still have pie left, go ahead and freeze it. Scrape the spiced pumpkin filling from the crust into a freezer container. Then you can use it later for smoothies, coffees, pancakes, oatmeal, you could even make ice-cream. Be creative, the possibilities are pretty much endless!
For single serve frozen spiced pumpkin pie filling, use an ice cube tray! Pop the frozen cubes into your favorite drinks, batters and recipes.
